What are the must see cities in Europe?

I am studying abroad in the fall to Maastricht in the Netherlands. After our two months of classes we get to backpack for a month around Europe. I just wanted to know some places that aren't obvious that would be awesome places to see! We also get the weekends to travel where we want. So I will have plenty of time to travel and hopefully see many amazing places.
